Perfect with your morning cuppa, before the gym, after the gym, to satisfy your sweet tooth, in the car, to grab running out the door, to bring to work or to add to your fridge staples… (see my previous blog “fridge staples”). You get the picture, these bites do it all.
1 large zuchini
3/4 cup peanut butter (warmed so it isn’t hard)
1/4 cup maple syrup
1 tsp vanilla extract
1 tsp baking soda
42g Arbonne vanilla protein powder
Handful of chocolate chips or if you prefer chopped walnuts
- Grate zuchini into clean tea towel, wrap & squeeze all the liquid out several times.
- Whisk egg until lightly beaten. Add peanut butter, vanilla & syrup until creamy. Stir in zuchini.
- Stir in baking soda and slowly add protein powder. Fold in chocolate chips or chopped walnuts.
*Recipe allows for 1 loaf tin. Double recipe for shallow baking dish.
Place in preheated oven at 180C for about 40mins. Should be squishy but firm enough to hold its shape. Cool on a wire rack and cut into squares. If you want to enjoy them at a later date simply wrap in parchment paper and pop them in the freezer!
